Summer Meatball Soup

Ingredients
- 1 Tbsp olive oil
- 1 medium onion, diced
- 3 medium carrots, peeled/diced
- 2 stalks celery, diced
- 2 large potatoes, peeled/diced
- 2 Tbsp chopped fresh parsley
- 2 tsp salt
- 1/2 tsp black pepper
- 6 cups beef stock
- 14 Margherita Meatballs

- In stock pot add olive oil, onions, carrots, celery, potatoes, parsley, salt, pepper and cook until soft.
- Add beef stock and cook for 5 hours on low.
- Add meatballs for final 30 minutes of cook time.
- Serve with bread.
