  • 1 medium onion, diced
  • 3 medium carrots, peeled/diced
  • 2 stalks celery, diced
  • 2 large potatoes, peeled/diced
  • 2 Tbsp chopped fresh parsley
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 6 cups beef stock
  • 14 Margherita Meatballs

Preparation

  1. In stock pot add olive oil, onions, carrots, celery, potatoes, parsley, salt, pepper and cook until soft.
  2. Add beef stock and cook for 5 hours on low.
  3. Add meatballs for final 30 minutes of cook time.
  4. Serve with bread.
