Ingredients

  • 3 lb. Fully Cooked Pulled Pork
  • 18 oz. reduced sodium BBQ sauce
  • 1lb. 2 oz. sliced sweet yellow onions
  • 1/2 cup olive oil
  • 24 multi-grain flour tortillas
  • 1 1/2 lb. shredded low fat Cheddar cheese

Preparation

  1. Combine pulled pork and BBQ sauce; heat through. Saute onion slices in olive oil until caramelized.
  2. Spoon 2 oz. pulled pork and .75 oz. onions on one half of tortilla. Top with 1 oz. cheese. Fold tortilla in half to form half moon shape. Grill 2 to 3 minutes on each side on griddle sprayed with butter flavored nonstick cooking spray.
