Pastrami-Spiced Bacon-Wrapped Pickles
Serves: 4
Ingredients
● ⅓ cup brown sugar
● ⅓ cup salt
● ⅓ cup black pepper
● 1tbsp granulated garlic
● 1 tbsp whole juniper berries
● 1 tsp red chili flakes
● 16 slices of Smithfield Bacon, cut in half
● 32 bread & butter pickle spears
Charred Scallion Dip
- 1 lb scallions
- 1 cup sour cream
- 1 cup mayonnaise
- 2 Tbsp minced shallots
- 1 juice from lemon
- 1 Tbsp granulated garlic
- 1 Tbsp granulated onion
- 1 Tbsp fresh parsley
- salt & pepper

- Combine spices in medium bowl.
- Wrap bacon slice around pickle spear. If needed use a small pick to seal bacon while cooking.
- Coat each bacon-wrapped pickle in the spice mixture thoroughly.
- In a 350 degree oven, cook bacon-wrapped pickles until the bacon has rendered and crispy about 30 minutes.
