Ingredients

● ⅓ cup brown sugar

● ⅓ cup salt

● ⅓ cup black pepper

● 1tbsp granulated garlic

● 1 tbsp whole juniper berries

● 1 tsp red chili flakes

16 slices of Smithfield Bacon, cut in half

● 32 bread & butter pickle spears

Charred Scallion Dip

  • 1 lb scallions
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 Tbsp minced shallots
  • 1 juice from lemon
  • 1 Tbsp granulated garlic
  • 1 Tbsp granulated onion
  • 1 Tbsp fresh parsley
  • salt & pepper

Preparation

  1. Combine spices in medium bowl.
  2. Wrap bacon slice around pickle spear. If needed use a small pick to seal bacon while cooking.
  3. Coat each bacon-wrapped pickle in the spice mixture thoroughly.
  4. In a 350 degree oven, cook bacon-wrapped pickles until the bacon has rendered and crispy about 30 minutes.
