Scrambled Egg, Ham & Cheese Tacos with Creamy Avocado Salsa

Ingredients
- 1 each 10 inch flour tortilla
- 3 each whole eggs
- 1 cup Ham (diced)
- 8 oz sharp cheddar cheese (shredded)
- 3 TBL vegetable oil
Creamy Avocado Salsa
- 1 jalapeño (roasted in pan and blistered)
- 4 medium tomatillos
- 2 garlic cloves
- 1 cup picked cilantro leaves
- 2 avocados, peeled

- Lightly warm tortilla on griddle top. Warm just enough to bend and roll tortilla.
- Whisk eggs and reserve as you will need to dice Ham.
- In a small sauté pan on medium heat, use 1 Tbsp vegetable and quickly heat and sauté the diced ham. Place onto a paper towel and pat oil off the ham.
- In the same pan (medium heat) pour in the whisked eggs and scramble on medium heat, just until it binds and forms a thick mass. Add ham and fold in, turn the heat off and add shredded cheddar cheese.
- Take cooked eggs, ham and cheese mixture to tortilla.
Creamy Avocado Salsa
- Combine all ingredients in food processor. Puree until smooth. Add half cup water to slightly smooth out. Season with salt.
