• 1 each 10 inch flour tortilla
  • 3 each whole eggs
  • 1 cup Ham (diced)
  • 8 oz sharp cheddar cheese (shredded)
  • 3 TBL vegetable oil

Creamy Avocado Salsa

  • 1 jalapeño (roasted in pan and blistered)
  • 4 medium tomatillos
  • 2 garlic cloves
  • 1 cup picked cilantro leaves
  • 2 avocados, peeled




Meal Course:



  1. Lightly warm tortilla on griddle top. Warm just enough to bend and roll tortilla.
  2. Whisk eggs and reserve as you will need to dice Ham.
  3. In a small sauté pan on medium heat, use 1 Tbsp vegetable and quickly heat and sauté the diced ham. Place onto a paper towel and pat oil off the ham.
  4. In the same pan (medium heat) pour in the whisked eggs and scramble on medium heat, just until it binds and forms a thick mass. Add ham and fold in, turn the heat off and add shredded cheddar cheese.
  5. Take cooked eggs, ham and cheese mixture to tortilla.

Creamy Avocado Salsa

  1. Combine all ingredients in food processor. Puree until smooth. Add half cup water to slightly smooth out. Season with salt.
