Carnitas Tacos

Ingredients
- 1 lb Smithfield® Smoke’NFast® Carnitas
- • 2 yellow onions, 1 quartered, 1 diced
- • 2 jalapeños
- • 1 lb tomatillos
- • 5 garlic cloves
- • Salt & pepper to taste
- • 1 Tbsp cooking oil
- • 2 bunches cilantro
- • 1 pack corn tortillas
- • 8 oz Chihuahua cheese, shredded

- In a medium bowl, add quartered onion, jalapeños, tomatillos and garlic. Toss vegetables in oil, salt and pepper.
- Roast vegetables in 375°F oven for 15 minutes. Remove vegetables from oven, add cilantro and blend into salsa.
- To warm carnitas, remove from pack and put meat with liquid in oven-safe sauté pan. Cover meat with foil in oven. While meat warms in oven, warm tortillas.
- Pull carnitas from oven.
- Build tacos
