  • 1 lb Smithfield® Smoke’NFast® Carnitas
  • • 2 yellow onions, 1 quartered, 1 diced
  • • 2 jalapeños
  • • 1 lb tomatillos
  • • 5 garlic cloves
  • • Salt & pepper to taste
  • • 1 Tbsp cooking oil
  • • 2 bunches cilantro
  • • 1 pack corn tortillas
  • • 8 oz Chihuahua cheese, shredded

Preparation

  1. In a medium bowl, add quartered onion, jalapeños, tomatillos and garlic. Toss vegetables in oil, salt and pepper.
  2. Roast vegetables in 375°F oven for 15 minutes. Remove vegetables from oven, add cilantro and blend into salsa.
  3. To warm carnitas, remove from pack and put meat with liquid in oven-safe sauté pan. Cover meat with foil in oven. While meat warms in oven, warm tortillas.
  4. Pull carnitas from oven.
  5. Build tacos
