Bacon–Peanut Butter Muffins

Ingredients
- 4 cups Smithfield® Bacon , cooked and chopped
- 1/2 cup of smooth peanut butter
- 2 cups all-purpose flour
- 1/2 cup light brown sugar
- 1 Tbsp baking powder
- 1/4 tsp kosher salt
- 2 medium-ripe bananas
- 4 Tbsp unsalted butter, melted
- 2 eggs
- 3/4 cup buttermilk
- 1 tsp vanilla extract
- 1 can pan spray

- In a large mixing bowl, whisk together the flour, brown sugar, baking powder and salt.
- In a separate large mixing bowl, mash the bananas; whisk in the peanut butter, chopped bacon (reserve 1 cup of chopped bacon for garnish), butter, eggs, buttermilk and vanilla extract until smooth.
- Add the wet ingredients into the dry ingredients, and fold together gently until it is all incorporated (do not over mix).
- Divide the batter evenly into prepared muffn tins, and bake at 350ºF for 18-20 minutes until golden brown. Let cool before serving.
