Spiced Omelet Cuban

Ingredients

  • 12 oz Smithfield® Ham, thinly sliced
  • 8 slices Smithfield® Bacon, cooked crisp
  • 1 loaf Cuban bread or baguette, cut into 4 portions
  • 8 slices Swiss cheese
  • 8-12 dill pickles, thinly sliced
  • 2 Tbsp butter, softened

Maple Mustard Sauce

  • 1/2 cup spicy brown mustard
  • 1/4 cup maple syrup
  • 1 tsp Worcestershire sauce
  • Salt and thyme, to taste

Spiced Omelet

  • 6 eggs, large
  • 1/2 tsp smoked paprika
  • 1/2 tsp dry mustard
  • 1/2 tsp ground coriander
  • 1/4 tsp turmeric
  • 1/2 tsp black pepper
  • Salt, to taste
  • 1 tsp olive oil or butter

Preparation

  1. Slice Cuban bread/baguette into 4 pieces, then cut each in half lengthwise.
  2. Spread maple mustard sauce on both cut sides of bread.
  3. Layer each sandwich with ham, bacon, spiced omelet, Swiss cheese and dill pickles.
  4. Heat panini press or heavy skillet with butter over medium.
  5. Press sandwiches until bread is golden and crisp, cheese is melted and fillings are hot, around 4-5 minutes.
  6. Slice diagonally and serve hot.

Maple Mustard Sauce Preparation

  1. In small bowl, whisk spicy brown mustard, maple syrup, Worcestershire sauce and pinch of salt and thyme until smooth. Adjust to taste.

Spiced Omelet Preparation

  1. Whisk eggs with paprika, dry mustard, coriander, turmeric, black pepper and salt until smooth.
  2. Heat olive oil or butter in nonstick pan over medium heat.
  3. Pour in egg mixture and cook as thin omelet, without folding. Cook until just set, then fold into flat rectangle that fits sandwich size. Cut into 4 equal portions.
