Good Morning Bowl
Serves: 4
Ingredients
- 1/2 lb. Smithfield® Ham, steak-sized portion
- 1/2 lb. Smithfield® Bacon, cut into lardons, fried until crispy
Red Eye Gravy
- 2 Tbsp butter
- 3 Tbsp all-purpose flour
- 1 cup beef bone broth
- 1/2 tsp sugar
- 1/2 cup brewed coffee
Grits
- 2 cups water
- 2 cups milk
- 4 oz butter
- 1 cup quick grits
- 1 Tbsp garlic, minced
- 4 oz goat cheese
- Salt and pepper, to taste
Roasted Mushrooms
- 6 oz baby portobello mushrooms, quartered
- 2 garlic cloves, minced
- 3 Tbsp olive oil
- 1 tsp balsamic vinegar
- Salt and pepper, to taste
- Fresh thyme, to taste
Boiled Peanuts
- Handful boiled peanuts, deshelled

Preparation
- Fry ham steak on sauté pan and remove.
- Assemble bowl with ham, grits, bacon lardons, roasted mushrooms and boiled peanuts. Top with red eye gravy and prepared egg.
Red Eye Gravy Preparation
- Add butter to pan to melt.
- Whisk in flour, bone broth and coffee to pan until thickened.
Grits Preparation
- Bring water, milk and butter to boil.
- Add grits and garlic, and whisk until creamy. Cook for 5 minutes.
- Add goat cheese until incorporated. Add salt and pepper to taste.
Roasted Mushrooms Preparation
- Preheat oven to 350°F.
- In large bowl, add quartered mushrooms, garlic, olive oil, balsamic vinegar and seasonings. Toss and place on
baking sheet. - Roast mushrooms to desired texture.
