Avgolemono Ramen with Carnitas

Ingredients
- 1 lb. Smithfield® Smoke’NFast® Carnitas, divided (8 oz simmered, 8 oz pan-fried for garnish)
- 4 large egg yolks
- 2 lemons, juiced
- 8 cups chicken stock, heated
- 1 lb. ramen noodles, cooked
- 4 eggs, poached
- 16-20 Fresno chile rings, pickled
- 1/4 cup feta cheese crumbles, blanched
- 4 tsp chili crisp olive oil
- Fresh dill fronds, for garnish

- In bowl, whisk egg yolks and lemon juice. Slowly temper with hot chicken stock, whisking until smooth and creamy. Keep warm. Do not boil.
- Stir 8 oz carnitas into broth.
- Divide ramen noodles among 4 serving bowls, then pour
broth over. - Garnish each bowl with 2 oz pan-fried carnitas, 1 poached egg, 4-5 Fresno chile rings, 1 Tbsp feta, dill fronds and drizzle of chili crisp olive oil.
