Triple Meat Lasagna

Ingredients

  • 6 oz Smithfield® Bacon, cooked and chopped
  • 6 oz Smithfield® Ham, diced
  • 6 oz Smithfield® Smoke’NFast® Superior Smokehouse Smoked Sausage, diced
  • 9 lasagna noodles, par-cooked
  • 6 large eggs, scrambled
  • 1 cup shredded cheese (Parmesan or kasseri), for topping

Guajillo Marinara

  • 3 dried guajillo chiles, stemmed, seeded, soaked until soft
  • 2 cloves garlic
  • 2 Tbsp olive oil
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp sugar
  • Salt and pepper, to taste

Béchamel

  • 4 Tbsp butter
  • 4 Tbsp all-purpose flour
  • 4 cups whole milk, warmed
  • 1 tsp salt
  • 1/2 tsp ground nutmeg
  • 1 cup shredded cheese (Parmesan or kasseri)

Preparation

  1. In greased half hotel pan, layer noodles, guajillo marinara, scrambled eggs, meat and béchamel.
  2. Repeat layers until pan is full, then finish with béchamel.
  3. Sprinkle shredded cheese evenly over top.
  4. Bake at 375°F for 35-40 minutes, until bubbling and golden.
  5. Rest 10 minutes before slicing.

Guajillo Marinara Preparation

  1. Blend softened guajillo with garlic and 1/2 cup soaking liquid until smooth.
  2. Heat olive oil in saucepan. Add chile purée, crushed tomatoes, oregano, sugar, salt and pepper.
  3. Simmer 20 minutes, stirring occasionally.

Béchamel Preparation

  1. Melt butter in saucepan, then whisk in flour to form roux.
  2. Slowly whisk in warm milk, then cool until thickened.
  3. Season with salt and nutmeg, then stir in cheese until smooth.
