Tostones Sandwich

Ingredients
- 3 oz Smithfield® Smoke’NFast® Pot Roast
- 8 pieces tostones
- 1 Tbsp garlic spread
- 1 Tbsp chimichurri
- Pickled red onions, as desired
Garlic Spread
- 1 head garlic
- Olive oil, as desired
- 1 tsp salt
Chimichurri
- 1 bunch cilantro, chopped
- 1 bunch parsley, chopped
- 2 tsp red pepper flakes
- 1/2 large red onion, chopped
- 3 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- Salt, to taste

- Fry tostones as directed.
- Heat pot roast.
- Place garlic spread on the bottom tostones.
- Add heated pot roast, chimichurri and slivers of pickled red onion.
Garlic Spread Preparation
- Roast garlic head in oven.
- Once soft and light brown, add garlic to blender.
- Slowly add oil and salt until thick sauce is reached.
Chimichurri Preparation
- Pick herbs and place in bowl.
- Add red pepper flakes, red onion, minced garlic, vinegar and oil.
- Mix to combine well.
- Season with salt to taste.
