Avgolemono Ramen with Carnitas

Ingredients

  • 1 lb. Smithfield® Smoke’NFast® Carnitas, divided (8 oz simmered, 8 oz pan-fried for garnish)
  • 4 large egg yolks
  • 2 lemons, juiced
  • 8 cups chicken stock, heated
  • 1 lb. ramen noodles, cooked
  • 4 eggs, poached
  • 16-20 Fresno chile rings, pickled
  • 1/4 cup feta cheese crumbles, blanched
  • 4 tsp chili crisp olive oil
  • Fresh dill fronds, for garnish

Preparation

  1. In bowl, whisk egg yolks and lemon juice. Slowly temper with hot chicken stock, whisking until smooth and creamy. Keep warm. Do not boil.
  2. Stir 8 oz carnitas into broth.
  3. Divide ramen noodles among 4 serving bowls, then pour
    broth over.
  4. Garnish each bowl with 2 oz pan-fried carnitas, 1 poached egg, 4-5 Fresno chile rings, 1 Tbsp feta, dill fronds and drizzle of chili crisp olive oil.
