Ingredients

8 oz Smithfield® Smoke’NFast® Carnitas

  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp oregano
  • 1 tsp paprika
  • 1 tomato, sliced
  • 1 red onion, sliced
  • 1 Tbsp parsley, chopped
  • Salt & pepper to taste

Tzatziki

  • 8 oz Greek yogurt
  • 1 small cucumber, grated
  • 2 garlic cloves, grated
  • 1 Tbsp dill, chopped
  • 1 Tbsp red wine vinegar
  • 1 Tbsp extra virgin olive oil
  • Salt & pepper to taste

Preparation

Carnitas

  1. Heat olive oil in sauté pan. Season carnitas with oregano and paprika, and place in pan. Sear on all sides.
  2. Remove carnitas from pan and set aside.

Tzatziki

  1. Place yogurt in a bowl. Add grated cucumber and garlic. Add remaining ingredients and mix until smooth.

Serving & Presentation

  1. Preheat oven to 350°F. Place mini pitas in oven until warm.
  2. Remove from heat. Top pitas with tzatziki and carnitas. Garnish with tomato, onion and parsley.
