Carnitas Greek Style

Ingredients
8 oz Smithfield® Smoke’NFast® Carnitas
- 1 Tbsp extra virgin olive oil
- 1 Tbsp oregano
- 1 tsp paprika
- 1 tomato, sliced
- 1 red onion, sliced
- 1 Tbsp parsley, chopped
- Salt & pepper to taste
Tzatziki
- 8 oz Greek yogurt
- 1 small cucumber, grated
- 2 garlic cloves, grated
- 1 Tbsp dill, chopped
- 1 Tbsp red wine vinegar
- 1 Tbsp extra virgin olive oil
- Salt & pepper to taste

Carnitas
- Heat olive oil in sauté pan. Season carnitas with oregano and paprika, and place in pan. Sear on all sides.
- Remove carnitas from pan and set aside.
Tzatziki
- Place yogurt in a bowl. Add grated cucumber and garlic. Add remaining ingredients and mix until smooth.
Serving & Presentation
- Preheat oven to 350°F. Place mini pitas in oven until warm.
- Remove from heat. Top pitas with tzatziki and carnitas. Garnish with tomato, onion and parsley.
