Good Morning Bowl

Ingredients

  • 1/2 lb. Smithfield® Ham, steak-sized portion
  • 1/2 lb. Smithfield® Bacon, cut into lardons, fried until crispy

Red Eye Gravy

  • 2 Tbsp butter
  • 3 Tbsp all-purpose flour
  • 1 cup beef bone broth
  • 1/2 tsp sugar
  • 1/2 cup brewed coffee

Grits

  • 2 cups water
  • 2 cups milk
  • 4 oz butter
  • 1 cup quick grits
  • 1 Tbsp garlic, minced
  • 4 oz goat cheese
  • Salt and pepper, to taste

Roasted Mushrooms

  • 6 oz baby portobello mushrooms, quartered
  • 2 garlic cloves, minced
  • 3 Tbsp olive oil
  • 1 tsp balsamic vinegar
  • Salt and pepper, to taste
  • Fresh thyme, to taste

Boiled Peanuts

  • Handful boiled peanuts, deshelled

Preparation

Preparation

  1. Fry ham steak on sauté pan and remove.
  2. Assemble bowl with ham, grits, bacon lardons, roasted mushrooms and boiled peanuts. Top with red eye gravy and prepared egg.

Red Eye Gravy Preparation

  1. Add butter to pan to melt.
  2. Whisk in flour, bone broth and coffee to pan until thickened.

Grits Preparation

  1. Bring water, milk and butter to boil.
  2. Add grits and garlic, and whisk until creamy. Cook for 5 minutes.
  3. Add goat cheese until incorporated. Add salt and pepper to taste.

Roasted Mushrooms Preparation

  1. Preheat oven to 350°F.
  2. In large bowl, add quartered mushrooms, garlic, olive oil, balsamic vinegar and seasonings. Toss and place on
    baking sheet.
  3. Roast mushrooms to desired texture.
