Ingredients

  • 4 slices Smithfield® Ham, cut into strips
  • 6 eggs
  • 4 Tbsp extra virgin olive oil
  • 1 ripe tomato, grated
  • 3 oz feta, crumbled
  • 1 Tbsp fresh oregano, chopped
  • 1 Tbsp fresh parsley, chopped
  • Salt & pepper to taste
  • 2 brioche buns
  • 2 oz baby arugula

Preparation

  1. Beat eggs in a bowl. Add salt and pepper to taste. Set aside.
  2. Heat olive oil in sauté pan. Add sliced ham, browning on both sides, and remove from heat.
  3. Add grated tomato to the pan and cook until thickened. Add eggs and cook for a few seconds. Use a rubber spatula to gently push the liquid to form curds.
  4. When eggs are almost cooked, add feta and remove from heat. Add oregano and parsley.
  5. Slice brioche buns and toast. Once toasted, place brioche on plate and top with egg mixture. Top egg mixture with browned sliced ham, and garnish with baby arugula.
