Greek Eggs with Tomato and Ham
Serves: 2
Ingredients
- 4 slices Smithfield® Ham, cut into strips
- 6 eggs
- 4 Tbsp extra virgin olive oil
- 1 ripe tomato, grated
- 3 oz feta, crumbled
- 1 Tbsp fresh oregano, chopped
- 1 Tbsp fresh parsley, chopped
- Salt & pepper to taste
- 2 brioche buns
- 2 oz baby arugula

- Beat eggs in a bowl. Add salt and pepper to taste. Set aside.
- Heat olive oil in sauté pan. Add sliced ham, browning on both sides, and remove from heat.
- Add grated tomato to the pan and cook until thickened. Add eggs and cook for a few seconds. Use a rubber spatula to gently push the liquid to form curds.
- When eggs are almost cooked, add feta and remove from heat. Add oregano and parsley.
- Slice brioche buns and toast. Once toasted, place brioche on plate and top with egg mixture. Top egg mixture with browned sliced ham, and garnish with baby arugula.
