Ham Banh Mi

Ingredients
Quick Pickle Ingredients
- 1 cup rice vinegar
- 1/2 cup sugar
- Pinch of salt
- 8 oz. daikon radish, julienned
- 8 oz. carrot, julienned
Sandwich Ingredients
- 1 Tbsp oil
- 2 cups Smithfield® Ham, sliced
- 2 Vietnamese baguettes
(or 6 dinner rolls) - 1/4 cups mayonnaise
- 2 cucumber, sliced
- Add Sriracha sauce and/or lime juice, as desired

- Combine rice vinegar, sugar and salt in small pot. Heat over medium heat until the brine reaches a boil. Whisk to make sure sugar dissolves thoroughly. Place vegetables in medium-sized bowl and pour the pickling liquid over them. Let marinate for 30 minutes while preparing the rest of the ingredients.
- Once done, drain marinating liquid and set aside pickled veggies for assembling in the sandwiches.
- When you’re ready to serve, brown ham. Heat large nonstick
pan over medium-high heat until hot. Add ham and fry until both sides are lightly caramelized, 1 to 2 minutes per side. Transfer ham to plate. - Halve the baguettes without cutting all the way through the bread. Spread mayonnaise on both insides. Stuff with a handful of sliced cucumbers, pickled vegetables and ham. Squeeze on Sriracha sauce and/or lime juice.
