Ham Sandwich with Bacon Jam

Ingredients
Ham Sandwich
- 1 bakery-fresh pretzel roll
- 8 slices
- 2 oz. mayonnaise
- 1 Tbsp fresh chives and or fresh parsley
- 2 thick slices vine ripe tomato
- 2 thick slices vine ripe tomato
- 2 leaves butter lettuce
- 3 oz. bacon jam (recipe follows)
- 5 oz. shaved Smithfield Ham
Bacon Jam
- 1 Tbsp olive oil
- 1 small yellow onion, julienned
- Pinch of salt
- 1 lb Smithfield Ready to Eat Bacon
- 2 cloves garlic, minced
- 1 Tsp cayenne pepper
- 1 cup coffee
- 1 cup maple syrup
- 1 cup apple cider vinegar

Ham Sandwich
- Combine mayonnaise with fresh herbs.
- Slice pretzel roll in half, layer bacon ham, butter lettuce, tomato slices, shaved ham, and Bacon Jam.
Bacon Jam Preparation
- In heavy-bottom pan, warm olive oil, and then add julienned onions and a pinch of salt. Cook until translucent and starting to brown.
- Add bacon. Continue to cook until bacon has started to brown and get crispy.
- Add garlic and cook for additional minute.
- Add remaining ingredients and cook over medium heat until mixture is well reduced and sticky.
- Refrigerate until ready for use.
