Ingredients

  • 1 bakery-fresh pretzel roll
  • 8 slices
  • 2 oz. mayonnaise
  • 1 Tbsp fresh chives and or fresh parsley
  • 2 thick slices vine ripe tomato
  • 2 thick slices vine ripe tomato
  • 2 leaves butter lettuce
  • 3 oz. bacon jam (recipe follows)
  • 5 oz. shaved Smithfield Ham

Bacon Jam

  • 1 Tbsp olive oil
  • 1 small yellow onion, julienned
  • Pinch of salt
  • 1 lb Smithfield Ready to Eat Bacon
  • 2 cloves garlic, minced
  • 1 Tsp cayenne pepper
  • 1 cup coffee
  • 1 cup maple syrup
  • 1 cup apple cider vinegar

Preparation

  1.  Combine mayonnaise with fresh herbs.
  2. Slice pretzel roll in half, layer bacon ham, butter lettuce, tomato slices, shaved ham, and Bacon Jam.

Bacon Jam Preparation

  1. In heavy-bottom pan, warm olive oil, and then add julienned onions and a pinch of salt. Cook until translucent and starting to brown.
  2. Add bacon. Continue to cook until bacon has started to brown and get crispy.
  3. Add garlic and cook for additional minute.
  4. Add remaining ingredients and cook over medium heat until mixture is well reduced and sticky.
  5. Refrigerate until ready for use.
