Loaded Brunch Noodle Bowl

Ingredients

  • 4 slices Smithfield® Bacon, chopped
  • 4-5 oz Smithfield® Chorizo, sliced
  • 4-5 oz Smithfield® Smoke’NFast® Superior Smokehouse Smoked Sausage
  • 2 3 oz dried bricks ramen noodles
  • 3 Tbsp soy sauce
  • 1 Tbsp chili oil
  • Fresh ginger, grated to taste
  • 2 Tbsp brown sugar
  • 2 tsp rice vinegar
  • 1/2 cup chicken broth
  • 2 eggs
  • Cilantro, freshly chopped, as desired
  • Scallions, thinly sliced, as desired
  • 1 lime, cut into wedges

Yum Yum Sauce

  • 1 cup mayonnaise
  • 1 Tbsp ketchup
  • 1 Tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 Tbsp sugar
  • 1 Tbsp rice vinegar
  • 1 Tbsp water, more if needed to thin
  • Pinch of paprika or cayenne

Preparation

  1. Prepare Yum Yum sauce. Set aside. (See recipe.)
  2. Preheat oven, and cook bacon to desired crispiness. Chop when cooled. Set aside.
  3. Cook noodles. Drain, but reserve some cooking water to avoid sticking. Cover and set aside.
  4. In small bowl, stir together soy sauce, chili oil, ginger, brown sugar and rice vinegar. Set aside.
  5. Sear chorizo and smoked sausage in skillet until caramelized.
  6. Stir in sauce, then reduce slightly. Add chicken stock, toss and allow to incorporate. Add noodles and toss until coated.
  7. In hot frying pan, fry eggs sunny-side up.
  8. Plate into bowls.
  9. Lightly drizzle Yum Yum sauce across eggs and noodles. Garnish with crispy bacon, freshly chopped cilantro leaves, thinly sliced scallions and lime wedges.

Yum Yum Sauce Preparation

  1. Whisk all ingredients until smooth.
  2. Adjust with water for drizzle consistency.
  3. Chill at least 1 hour, but overnight is best.
  4. Stir before serving.
