Piadina with Prosciutto, Mascarpone, Arugula and Almonds

Ingredients
- 12 oz Margherita® Prosciutto, thinly sliced
- 8 piadina, 8-inch, warmed
- 1 lb. mascarpone
- 3 cups arugula
- 1 Tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- Sliced almonds, for garnish

- Arrange the piadina on clean surface lined with parchment paper or plastic wrap. Utilizing offset spatula, evenly distribute and spread the mascarpone onto each piadina.
- Toss arugula with oil, salt and pepper until evenly coated. Evenly distribute seasoned arugula onto each piadina.
- Evenly distribute prosciutto and almonds among piadina. Fold piadina over filling to create half-moon shape.
- Place filled piadina onto appropriate serving vessel and serve right away.
