Barbacoa Sliders

Ingredients

  • 4 King’s Hawaiian® Rolls
  • 1 oz butter
  • 8 oz Smithfield® Smoke’NFast® Shredded Beef Brisket (see birria recipe below)
  • 4 oz Mexican cheese, shredded (preferably Oaxaca, Manchego or Mozzarella)
  • 2 oz white onion, diced
  • 2 Tbsp cilantro sprigs
  • 1 cup birria beef broth

Preparation

  1. Carefully separate 4 rolls, keeping them in a cluster of 4. Slice in half and toast with butter until brown and crispy on flattop.
  2. Place 4 oz shredded cheese on flattop for 2 minutes until melted and slightly crispy on the edges. Place the top bun onto the cheese and remove.
  3. Reheat brisket on flattop until hot. Place on bottom bun. Top meat with half of the white onions and cilantro sprigs. Close sandwich.
  4. Serve with 1 cup of the beef broth on the side and garnish with the remaining diced white onion and cilantro.
