Tortilla De Patatas

Ingredients
- 1 cup Smithfield® Breakfast Sausage, diced
- 1 ¼ lbs. onions
- 2 ½ lbs. Yukon gold potatoes
- 2 Tbsp salt
- 15 eggs, whisked
- Cooking oil or olive oil, for poaching

- Julienne onions and cut potatoes in half lengthwise. Turn potato and slice in ¼-inch slices across width.
- Place onions and potatoes in with salt and poaching oil, cooking until soft.
- Strain oil into perforated pan.
- Add vegetables into large bowl with whisked eggs and diced breakfast sausage.
- Pour into 2-inch pan with paper. Cover top with ½ inch of confit oil.
- Bake at 300°F for 15 minutes.
