  • 1 cup Smithfield® Breakfast Sausage, diced
  • 1 ¼ lbs. onions
  • 2 ½ lbs. Yukon gold potatoes
  • 2 Tbsp salt
  • 15 eggs, whisked
  • Cooking oil or olive oil, for poaching

Preparation

  1. Julienne onions and cut potatoes in half lengthwise. Turn potato and slice in ¼-inch slices across width.
  2. Place onions and potatoes in with salt and poaching oil, cooking until soft.
  3. Strain oil into perforated pan.
  4. Add vegetables into large bowl with whisked eggs and diced breakfast sausage.
  5. Pour into 2-inch pan with paper. Cover top with ½ inch of confit oil.
  6. Bake at 300°F for 15 minutes.
