Tostones Sandwich

Ingredients

  • 3 oz Smithfield® Smoke’NFast® Pot Roast
  • 8 pieces tostones
  • 1 Tbsp garlic spread
  • 1 Tbsp chimichurri
  • Pickled red onions, as desired

Garlic Spread

  • 1 head garlic
  • Olive oil, as desired
  • 1 tsp salt

Chimichurri

  • 1 bunch cilantro, chopped
  • 1 bunch parsley, chopped
  • 2 tsp red pepper flakes
  • 1/2 large red onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil
  • Salt, to taste

Preparation

  1. Fry tostones as directed.
  2. Heat pot roast.
  3. Place garlic spread on the bottom tostones.
  4. Add heated pot roast, chimichurri and slivers of pickled red onion.

Garlic Spread Preparation

  1. Roast garlic head in oven.
  2. Once soft and light brown, add garlic to blender.
  3. Slowly add oil and salt until thick sauce is reached.

Chimichurri Preparation

  1. Pick herbs and place in bowl.
  2. Add red pepper flakes, red onion, minced garlic, vinegar and oil.
  3. Mix to combine well.
  4. Season with salt to taste.
