Triple Meat Lasagna

Ingredients
- 6 oz Smithfield® Bacon, cooked and chopped
- 6 oz Smithfield® Ham, diced
- 6 oz Smithfield® Smoke’NFast® Superior Smokehouse Smoked Sausage, diced
- 9 lasagna noodles, par-cooked
- 6 large eggs, scrambled
- 1 cup shredded cheese (Parmesan or kasseri), for topping
Guajillo Marinara
- 3 dried guajillo chiles, stemmed, seeded, soaked until soft
- 2 cloves garlic
- 2 Tbsp olive oil
- 1 can (28 oz) crushed tomatoes
- 1 tsp dried oregano
- 1/2 tsp sugar
- Salt and pepper, to taste
Béchamel
- 4 Tbsp butter
- 4 Tbsp all-purpose flour
- 4 cups whole milk, warmed
- 1 tsp salt
- 1/2 tsp ground nutmeg
- 1 cup shredded cheese (Parmesan or kasseri)

- In greased half hotel pan, layer noodles, guajillo marinara, scrambled eggs, meat and béchamel.
- Repeat layers until pan is full, then finish with béchamel.
- Sprinkle shredded cheese evenly over top.
- Bake at 375°F for 35-40 minutes, until bubbling and golden.
- Rest 10 minutes before slicing.
Guajillo Marinara Preparation
- Blend softened guajillo with garlic and 1/2 cup soaking liquid until smooth.
- Heat olive oil in saucepan. Add chile purée, crushed tomatoes, oregano, sugar, salt and pepper.
- Simmer 20 minutes, stirring occasionally.
Béchamel Preparation
- Melt butter in saucepan, then whisk in flour to form roux.
- Slowly whisk in warm milk, then cool until thickened.
- Season with salt and nutmeg, then stir in cheese until smooth.
