• 4 ½ lb. Fully Cooked Pork Loin, cut into 3/4-inch cubes
  • 3 lb. fresh broccoli, chopped
  • 1 lb. fresh carrots, sliced
  • 1 tablespoon minced garlic
  • 3 cups 1% milk
  • 3 tablespoons diet/light margarine
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon Italian seasoning
  • 3/4 cup fat free mozzarella cheese
  • 3/4 cup freshly grated Parmesan cheese
  • 3 large tomatoes, diced
  • 3 green onions, finely chopped
  • 24 oz. bow tie pasta, cooked

  1. Heat large skillet over high heat; spray with nonstick cooking spray. Saute pork cubes, broccoli, carrots and garlic until vegetables are tender-crisp.
  2. Meanwhile, combine milk, margarine, pepper and Italian seasoning in saucepan; bring to a boil over medium heat, stirring constantly. Remove from heat and stir in mozzarella and Parmesan until blended.
  3. Stir cooked pasta, tomatoes and green onions into pork mixture. Toss with cheese sauce before serving.
