Grilled Vietnamese Pork Chops with Slaw

Ingredients
Pork Chops
- 6 Bone-In Porterhouse Chops
- 3 green onions, sliced
- 6 cloves garlic, smashed
- ½ cup fresh cilantro, roughly chopped
- ½ cup fish sauce
- 2 Tbsp. brown sugar
- 1 Tbsp. lime juice
- 1 Tbsp. salt
Slaw
- 4 cups cabbage, thinly sliced
- 1 cup shredded carrot
- ¼ cup fresh cilantro leaves
- ¼ cup torn mint leaves
- 1 Tbsp. lime juice
- 2 Tbsp. rice wine vinegar
- 2 tsp. fish sauce
- Salt and Pepper to taste

Pork Chops
- Combine all seasoning ingredients in a bowl and whisk together. Place pork chops in a non-reactive container and pour over marinade. Allow to sit for 2 hours.
- Heat a grill pan or outdoor grill to high heat. Remove pork chops from marinade and grill, turning often, until internal temperature reaches 145°F.
Slaw:
- Combine all ingredients in a large bowl and taste for seasoning. Note: this can be made ahead of time and allowed to sit as flavors will continue to develop.
