Pork Chops

  • 6 Bone-In Porterhouse Chops
  • 3 green onions, sliced
  • 6 cloves garlic, smashed
  • ½ cup fresh cilantro, roughly chopped
  • ½ cup fish sauce
  • 2 Tbsp. brown sugar
  • 1 Tbsp. lime juice
  • 1 Tbsp. salt


  • 4 cups cabbage, thinly sliced
  • 1 cup shredded carrot
  • ¼ cup fresh cilantro leaves
  • ¼ cup torn mint leaves
  • 1 Tbsp. lime juice
  • 2 Tbsp. rice wine vinegar
  • 2 tsp. fish sauce
  • Salt and Pepper to taste

Pork Chops

  1. Combine all seasoning ingredients in a bowl and whisk together. Place pork chops in a non-reactive container and pour over marinade. Allow to sit for 2 hours.
  2. Heat a grill pan or outdoor grill to high heat. Remove pork chops from marinade and grill, turning often, until internal temperature reaches 145°F.


  1. Combine all ingredients in a large bowl and taste for seasoning. Note: this can be made ahead of time and allowed to sit as flavors will continue to develop.
