- 16 oz. Bacon
- 8 eggs
- 1 1/4 cup chicken stock
- 1/4 cup diced cooked bacon
- 1/4 tsp. salt
- 2 cups Maseca
- 8 oz. black beans
- 1 cup salsa de arbol

- Start with preparing the corn masa. In a medium bowl mix together, Maseca, salt, diced bacon and chicken stock. Mix thoroughly for about 2 minutes to form soft dough.
- Take a portion of corn masa and roll it into oval shape. Preheat ungreased comal on medium heat. Cook the oval masa on both sides for 4 minutes. Place it directly on a plate and spread warm black beans. Finish it off with poached eggs and Salsa de Arbol on top.
