• 16 oz. Bacon
  • 8 eggs
  • 1 1/4 cup chicken stock
  • 1/4 cup diced cooked bacon
  • 1/4 tsp.  salt
  • 2 cups Maseca
  • 8 oz. black beans
  • 1 cup  salsa de arbol

Dish Type:



  1. Start with preparing the corn masa. In a medium bowl mix together, Maseca, salt, diced bacon and chicken stock. Mix thoroughly for about 2 minutes to form soft dough.
  2. Take a portion of corn masa and roll it into oval shape. Preheat ungreased comal on medium heat. Cook the oval masa on both sides for 4 minutes. Place it directly on a plate and spread warm black beans. Finish it off with poached eggs and Salsa de Arbol on top.
