Ingredients
- Pork Medallions
- 2 cups panko bread crumbs
- 1 oz. ground black pepper
- 1 oz. ground cumin
- Chopped garlic
- Salt to taste
- 1 can pinto beans
- 2 cups guacamole
- 1 cup olive oil
- 4 oz. asadero cheese

- Start with pounding out the pork medallions as thin as possible. Place the flattened pork medallions in a bowl; add the garlic, salt, black pepper and cumin. Let it all marinate together. Take out the medallions and bread them with panko bread crumbs on a separate plate.
- Place the breaded pork medallions in a pre-heated pan with the olive oil. Sear the medallions golden brown on both sides.
- Slice the Asadero cheese into normal thick slices and pan sear the cheese on both sides in a non-stick pan. Place the seared Asadero cheese on top of the golden brown medallions and serve with a side of guacamole and pinto beans.
