  • 2 cups brown sugar
  • 1 cup pineapple juice
  • 1/2 cup whiskey
  • 1/4 cup Worcestershire sauce
  • 1 Tbsp. granulated garlic
  • 1 Tbsp. onion powder

Preparation

  1. For whiskey glaze: Combine all Ingredients except pork in a small saucepan. Cook over medium heat until reduced and sauce is slightly thickened.
  2. Season medallions with olive oil, sea salt and cracked pepper.
  3. Heat grill to high.
  4. Brush grates with olive oil. Grill medallions until internal temperature reaches 145° F, turning occasionally and brushing with whiskey glaze. Let stand 3 minutes before serving.
