Ingredients

  • ½ cup quinoa
  • 1 cup water
  • ½ cup millet
  • 2 CUP water
  • 2 cups milk
  • 1 Tbsp. cornstarch
  • 4 Tbsp. water
  • 4 oz. cream cheese
  • 4 oz. cheddar cheese, grated
  • 1 tsp. salt
  • 1/2 teaspoon pepper
  • 8 oz. Pulled Chicken, cooked
  • 6 oz. broccoli florets, blanched
  • 3 oz. Bacon, cooked and chopped

Preparation

  1. Cook the quinoa on medium heat covered with the 1 cup water, then set aside
  2. Cook the millet on medium heat covered with 2 cups water, set aside
  3. Both grains should be tender and light
  4. Heat the milk to 200 degrees
  5. In a small bowl, mix together the cornstarch and 4 Tablespoons water
  6. Stream in the cornstarch slurry, bring to a simmer and cook until thickened
  7. Whisk in the cream cheese and the cheddar cheese
  8. Season with salt and pepper
  9. Portion each bowl with 1 cup total of the cooked grains, 2 oz pulled chicken, 1 1/2 oz broccoli florets, 3/4 oz chopped bacon.
  10. Drizzle with 1/2 cup cheese sauce
