Seared Pork Chops with Plantains

Ingredients
- 2 Smithfield® Pork Chops
- 1 cup fresh orange juice
- 1 sprig rosemary
- Salt & pepper to taste
- 2 Tbsp vegetable oil
- 2 plantains, yellow skin, cut lengthwise
- 3 Tbsp butter
- ¼ cup fresh chives, finely cut

- Add the pork chops into a dish and pour the orange juice over it, seasoning with salt, pepper and a few leaves of rosemary. Let it marinate for a few minutes.
- Heat up large sauté pan, adding the vegetable oil and drying the excess moisture from the pork. Sear it over medium heat.
- After about 4 minutes, when it’s golden brown on the bottom, flip the pork to cook on the other side.
- Add the butter and plantains, and lower the heat to medium-low. Let these cook for another 5 minutes until plantains are cooked and have gained some color as well.
- Check for 145°F temperature on the pork, cook for a few minutes longer if necessary, and remove pork and plantains onto a serving dish.
- Add the juice from the marinade to the saucepan and stir well, bringing the juice to a light boil, and add the chives.
- Cook for another few seconds, then pour the sauce over the pork and plantain. Garnish with a sprig of rosemary.
