Smoked Sausage Mac

Ingredients

  • 4 lbs. Smithfield® Smoke’NFast® Superior Smokehouse Smoked Sausage
  • 4 cups prepared macaroni and cheese
  • ½ cup pimentos
  • ½ cup panko breadcrumbs
  • 2 Tbsp butter, melted
  • Salt and pepper, to taste
  • Parsley, chopped, for garnish

Preparation

  1. Pre-heat oven to 400°F or set salamander/broiler on medium.
  2. Mark sausage on char broiler long enough to get nice grill marks.
  3. Pull sausage from grill and allow to cool. Once cool, slice sausage on a bias.
  4. In a mixing bowl, combine the prepared macaroni and cheese, sliced cheese and pimentos. Add salt and pepper to taste, then mix thoroughly.
  5. Transfer mix to a baking vessel.
  6. In a small mixing bowl, combine the panko breadcrumbs and melted butter. Toss to coat.
  7. Evenly sprinkle the buttered breadcrumbs on top of the macaroni and cheese.
  8. Bake in oven or salamander/broiler until the internal temperature reaches 165°F and the breadcrumbs have browned.
  9. Remove from heat, garnish with chopped parsley and serve.
