Smoked Sausage Cajun Pasta

Ingredients
- 3 Tbsp olive oil
- 1 lb. Smithfield® Smoke’NFast® Superior Smokehouse Smoked Sausage
- 1 medium sweet onion, chopped
- 2 Tbsp Cajun seasoning
- ½ tsp red pepper flakes
- 3 garlic cloves, minced
- 28 oz. crushed tomato, canned
- 1/3 vodka
- 1 Tbsp balsamic vinegar
- 1 tsp kosher salt
- ¼ cup fresh basil, torn
- ¾ cup heavy cream
- 1 box cavatappi pasta

- Cook cavatappi pasta according to instructions on the box and set aside until needed.
- Heat pan and add olive oil.
- Add the smoked sausage and cook for 1-2 minutes, take off the pan and add to a bowl.
- Add onion to the pan and cook for 1 minute until translucent.
- Add garlic, red pepper flakes and crushed tomato and cook for another minute or so.
- Add vodka, balsamic vinegar and kosher salt.
- Add the sausage back into the pan with torn basil and Cajun seasoning. Stir in the heavy cream.
- Toss the sausage and sauce together with the pasta and serve.
