Smoked Sausage Cajun Pasta

Ingredients

  • 3 Tbsp olive oil
  • 1 lb. Smithfield® Smoke’NFast® Superior Smokehouse Smoked Sausage
  • 1 medium sweet onion, chopped
  • 2 Tbsp Cajun seasoning
  • ½ tsp red pepper flakes
  • 3 garlic cloves, minced
  • 28 oz. crushed tomato, canned
  • 1/3 vodka
  • 1 Tbsp balsamic vinegar
  • 1 tsp kosher salt
  • ¼ cup fresh basil, torn
  • ¾ cup heavy cream
  • 1 box cavatappi pasta

Preparation

  1. Cook cavatappi pasta according to instructions on the box and set aside until needed.
  2. Heat pan and add olive oil.
  3. Add the smoked sausage and cook for 1-2 minutes, take off the pan and add to a bowl.
  4. Add onion to the pan and cook for 1 minute until translucent.
  5. Add garlic, red pepper flakes and crushed tomato and cook for another minute or so.
  6. Add vodka, balsamic vinegar and kosher salt.
  7. Add the sausage back into the pan with torn basil and Cajun seasoning. Stir in the heavy cream.
  8. Toss the sausage and sauce together with the pasta and serve.
