Brisket Totchos
Serves: 4
Ingredients
- 12 oz Smithfield® Smoke’NFast® Chopped Beef Brisket
- 1 lb. frozen tater tots, fried or baked until golden
- 1 Tbsp neutral oil
- 4 large eggs, fried sunny-side up
- 2 scallions, thinly sliced
- 1/4 cup pickled jalapeños
- Cilantro leaves, handful
House BBQ Sauce
- 1 1/2 cups ketchup
- 1 tsp granulated garlic
- 2 Tbsp Dijon mustard
- 2 Tbsp Worcestershire sauce
- 1/4 cup light brown sugar
- 1/4 tsp cayenne
- 1 tsp all-purpose seasoning
- 3 Tbsp apple cider vinegar
Beer Gouda Cheese Sauce
- 2 Tbsp unsalted butter
- 2 Tbsp all-purpose flour
- 1/2 cup beer (lager or light ale)
- 1 cup whole milk
- 1 cup shredded Gouda (smoked preferred)
- 1/2 tsp mustard powder
- Salt and pepper, to taste

- Fry or bake tater tots according to package instructions until crisp and golden. Keep warm.
- Heat oil on flat top or skillet over medium-high heat. Add chopped brisket, then drizzle with 1-2 tablespoons of BBQ sauce. Cook until edges are crispy and caramelized, about 3-4 minutes.
- Fry eggs sunny-side up until whites are set and yolks remain runny.
- Arrange tater tots on serving platter with beer Gouda cheese sauce. Scatter crisped brisket, then place fried egg, scallions, pickled jalapeños and fresh cilantro. Drizzle with BBQ sauce.
House BBQ Sauce Preparation
- In small saucepan, combine ketchup, granulated garlic,
Dijon mustard, Worcestershire sauce, brown sugar, cayenne, all-purpose seasoning and apple cider vinegar. - Bring to boil, then reduce to gentle simmer for 5 minutes,
stirring occasionally. - Remove from heat and set aside.
Beer Gouda Cheese Sauce Preparation
- In saucepan, melt butter over medium heat. Whisk in flour to form roux and cook for 1 minute.
- Slowly whisk in beer, then milk, until smooth.
- Reduce heat to low, then add cheese, mustard powder, salt and pepper.
- Stir until melted and creamy. Hold warm.
