Colorful Bow Tie Pork

Ingredients
- 4 ½ lb. Fully Cooked Pork Loin, cut into 3/4-inch cubes
- 3 lb. fresh broccoli, chopped
- 1 lb. fresh carrots, sliced
- 1 tablespoon minced garlic
- 3 cups 1% milk
- 3 tablespoons diet/light margarine
- 3/4 teaspoon black pepper
- 3/4 teaspoon Italian seasoning
- 3/4 cup fat free mozzarella cheese
- 3/4 cup freshly grated Parmesan cheese
- 3 large tomatoes, diced
- 3 green onions, finely chopped
- 24 oz. bow tie pasta, cooked

- Heat large skillet over high heat; spray with nonstick cooking spray. Saute pork cubes, broccoli, carrots and garlic until vegetables are tender-crisp.
- Meanwhile, combine milk, margarine, pepper and Italian seasoning in saucepan; bring to a boil over medium heat, stirring constantly. Remove from heat and stir in mozzarella and Parmesan until blended.
- Stir cooked pasta, tomatoes and green onions into pork mixture. Toss with cheese sauce before serving.
