Rack of Pork Cumin Lime Crusted
- 1 lime, juiced
- ¾ cup extra virgin olive oil
- 2 Tbsp. roasted garlic puree
- 1 Tbsp. sea salt
- 1 tsp. cumin
- 1 tsp. cracked black pepper
- 1 tsp. smoked paprika
- 1 Rack of Pork

- Combine all ingredients except pork in bowl. Rub paste liberally on rack of pork.
- Heat convection oven to 375°F.
- Place rack of pork on sheet pan, bone side up. Roast until internal temperature reaches 145°F. Let stand 3 minutes before serving.
