  • ¾ cup extra virgin olive oil
  • 2 Tbsp. roasted garlic puree
  • 1 Tbsp. sea salt
  • 1 tsp. cumin
  • 1 tsp. cracked black pepper

Preparation

  1. Combine all ingredients except pork in bowl. Rub paste liberally on rack of pork.
  2. Heat convection oven to 375°F.
  3. Place rack of pork on sheet pan, bone side up. Roast until internal temperature reaches 145°F. Let stand 3 minutes before serving.
