Ingredients

  • 1 Tbsp. canola oil
  • 1/2 cup diced, roasted fingerling potatoes
  • 6 oz. Eckrich by Smithfield Smoked Sausage, diced
  • 2 corn tortillas
  • 2 oz. Pimento Cheese Spread (recipe to follow)
  • 2 eggs, scrambled
  • 1 Tbsp. fresh cilantro, chopped
  • 1 lime, cut in half

Pimento Cheese Spread:

  • 1/2 cup sharp cheddar cheese
  • 1/2 cup smoked Gouda cheese
  • 1 cup mayonnaise
  • 2 chipotle peppers, minced
  • 1/4 cup roasted red peppers, diced
  • 1 tsp. grated onion
  • salt and pepper, to taste

Preparation

  1. Heat oil in sauté pan over medium heat. Add potatoes and cook until golden brown. Add smoked sausage and sauté until sausage is warmed through.
  2. In separate pan (or oven), warm tortillas briefly on both sides.
  3. To serve: Spread generous amount of Pimento Cheese Spread on tortillas. Top with smoked sausage-potato mixture.
  4. Add scrambled eggs and fresh cilantro, and garnish with squeeze of fresh lime.

  1. Combine all ingredients in bowl.
