Bacon Peanut Butter Muffins

Ingredients

  • 4 cups Smithfield® Bacon , cooked and chopped
  • 1/2 cup of smooth peanut butter
  • 2 cups all-purpose flour 
  • 1/2 cup light brown sugar
  • 1 Tbsp baking powder
  • 1/4 tsp kosher salt
  • 2 medium-ripe bananas
  • 4 Tbsp unsalted butter, melted
  • 2 eggs
  • 3/4 cup buttermilk
  • 1 tsp vanilla extract
  • 1 can pan spray

Preparation

  1. In a large mixing bowl, whisk together the flour, brown sugar, baking powder and salt.
  2. In a separate large mixing bowl, mash the bananas; whisk in the peanut butter, chopped bacon (reserve 1 cup of chopped bacon for garnish), butter, eggs, buttermilk and vanilla extract until smooth.
  3. Add the wet ingredients into the dry ingredients, and fold together gently until it is all incorporated (do not over mix). 
  4. Divide the batter evenly into prepared muffn tins, and bake at 350ºF for 18-20 minutes until golden brown. Let cool before serving.
