  • 1 cup brown sugar
  • 1 cup sea salt
  • 1 gallon ice cold water
  • ¾ cup juniper berries

Preparation

  1. Combine all ingredients except pork.
  2. Pour over pork in large bowl, making sure meat is completely covered with brine. Cover and refrigerate for at least 48 hours.
  3. Remove pork from brine and pat dry.
  4. Rotisserie roast at 350°F until internal temperature reaches 145°F. Let stand 3 minutes before serving.
